Old-Fashioned Caramelized Onion Chicken

1. Prepare the chicken
Pat the chicken thighs dry with paper towels. Season both sides generously with salt, black pepper, paprika, thyme, and rosemary. Let the chicken sit for about 10 minutes so the seasoning can absorb into the meat.
2. Brown the chicken
Heat the olive oil in a large heavy skillet over medium-high heat. Add the chicken thighs skin-side down and cook for about 5–7 minutes, until the skin becomes deeply golden and crispy.
Turn the chicken over and cook for another 3–4 minutes. Remove the chicken from the skillet and set it aside.
3. Caramelize the onions
Reduce the heat to medium and add the butter to the same skillet. Add the sliced onions and cook slowly for about 15–20 minutes, stirring occasionally.
The onions should become soft, golden brown, and slightly caramelized. Don’t rush this step—the caramelized onions are what give this dish its amazing flavor. 🧅🤎
4. Add the garlic
Add the minced garlic and cook for about 30–60 seconds, just until fragrant. Be careful not to burn the garlic.
5. Make the sauce

Slowly pour in the chicken broth while stirring continuously to prevent lumps. Add the Worcestershire sauce, Dijon mustard, and brown sugar.
Stir everything together until you have a smooth, rich sauce.
6. Return the chicken
Place the browned chicken thighs back into the skillet, arranging them over the caramelized onions.
Cover the skillet and reduce the heat to low. Let everything simmer gently for about 25–30 minutes, or until the chicken is completely cooked through and tender.
7. Finish the dish
Taste the sauce and adjust the seasoning with additional salt and black pepper if needed.
Sprinkle freshly chopped parsley over the top before serving.
